Starting a new tradition today, Friday Favorite.  Each Friday I will share with you one of my favorite things.  No holds barred – from restaurant to well, whatever!

Today’s favorite is summer grilling.  Now I love to cook and entertain for my friends and family and I have a few recipes I found over the years that I keep going back to.  This is a grilled chicken recipe that I got from Oprah magazine complements of chef – Moira Hodgson.  I have included my hints based ob many successful cook-outs.  Recipe can easily be doubled for a crowd and makes great leftovers.

Grilled Coriander-Cumin Chicken with Cilantro-Yogurt Dipping Sauce

Chicken

2 cloves garlic, minced (I tend to add a bit more)

1tsp. sea salt

Juice of one lime

1 Tbsp. ground cumin

1 Tbsp. ground coriander

1tsp. hot Hungarian paprika (if you just have regular paprika – add 1 tsp. ground cayenne pepper to get that kick)

½ cup olive oil

¼ chopped cilantro

8 pieces of chicken with skin– I prefer thighs because they are more uniform for grilling and stay moist.

Place all ingredients except chicken in a blender or food processor.  Puree until smooth.  Place chicken in large bowl and pour over spice mixture and use your hands to toss chicken to coat.  Cover chicken with plastic wrap and marinate at room temperature for 1 hour our up to 8 in the refrigerator.

Preheat gas grill to medium or prepare charcoal grill.  Place chicken pieces on the grill, skin side down.  Cover and cook, turning occasionally, 20-25 minutes.  Chick should be brown and crusty, and cooked through so juices run clear when pierced with a fork.  Serve with dipping sauce on the side.

Dipping Sauce

¾ cup plain yogurt

¼ cup chopped cilantro

Juice of one lime

¼ sea salt, plus more to taste

¼ freshly ground black pepper, plus more to taste

Make dipping sauce while chicken is marinating.  In a small serving bowl, combine yogurt, cilantro, and lime juice, mix well.  Stir in salt and pepper.  Adjust seasoning to taste.  Cover and refrigerate until ready to serve.
